Jamaican Foods-Ackee & saltfish

Ackee & Saltfish One of the most delicious Jamaican dishes is ackee and saltfish. Saltfish is actually dried salted codfish, imported mostly from Canada. Ackee is a tree bearing fruits that grows all over Jamaica. The pods must be opened before it can be eaten. It is normally cooked with saltfish but if a person has high blood pressure they might prefer to desalt  the salt fish separately. After the ackee is cooked, the water can be drained off. Cut up seasoning such as onion, garlic, escallion and put in a frying pan along with your saltfish, then you pour in the ackee. Stir for about five minutes before serving. This dish is normally served at breakfast but it can be had for lunch or dinner. For breakfast serve with fritters, roasted or fried breadfruit, boiled yams, boiled bananas and boiled dumplings. You can also serve it with fry dumplings. For lunch serve with rice and peas and for dinner you can also serve with rice and peas. You can also serve it with boiled yams, banana

The Jamaican Electioons

The seventeenth Jamaica General Elections were held on February 25,2016. It resulted in the Jamaica Labor Party (J.L.P) winning thirty two (32) seats in the country's house of representatives. The People's National Party (P.N.P) won thirty one (31). These results are subject to a final count and maybe magisterial re-counts. Prior to the elections the P.N.P had forty two seats to the J.L.P's twenty one. Most pollsters gave the J.L.P no chance and some went as far as to predict a near wipe out of the party. The election was for the most part violence free. It also witnessed one of the lowest turnouts in election history in Jamaica. Jamaica's first general election took place in 1944. It is one of the tightest seat counts in the history of elections in Jamaica. Barring any unforseen  circumstances Andrew Holness will be sworn in as Prime Minister and Portia Simpson as Leader of the Opposition. Incidentally it will be their second stint in those roles. Did you know that Nor

Late for the Exams

I looked up from the examination paper and saw my friend, Barry, just entering the examination hall. Hell, I thought as I looked at my watch and saw that the time was 4.00 pm and we only had an hour left. When the examinations were finished I asked him why had reached so late. He told me that he had seen 4.00 hours on his docket and assumed that the exam would have started at 4.00 pm. He said that he had not been the only one who had been caught. I remembered seeing a girl coming in at same time as he did. This all speaks to exam preparation and Barry had no one to blame but himself. He had gotten a docket and should have sought assistance if he didn't understand the time. Anyway how do you come to a three hour examination at 4.00 p.m. He told me that he thought he had passed, but I doubted that, because you'd have to be a genius to take one hour and pass a three hour examination.

Grateful Hill to St. Mary's College-A Journey

I attended St. Mary’s College between 1966 and 1971. I went there after passing the Common Entrance Examinations. Surprisingly, I was the only student from the Grateful Hill Primary School who was successful in the examinations that year. There were several boys and girls in my class who I was surprised were not successful too. Margaret Harper, Lola Howell, Lois Service, Lorna Nugent, Paulette Morrison, Carl Latore, June Hamilton, Margaret Phillips, Pansy Marsden, Doreen Douglas, Maureen Thames and Sonia Eason were some of the students I thought would have passed. Lorna, Doreen and Paulette did attend St. Mary’s College on half scholarships. In those days if you won a full scholarship you got a grant of money plus a book grant. Incidentally Carl Latore was the only boy along with myself who took the examinations that year. Headley Morrison, whom I thought was as bright as I was, for some strange reasons chose not to sit the examinations. On the day when the results came out Mrs. E
