One of the most delicious Jamaican dishes is ackee and saltfish. Saltfish is actually dried salted codfish, imported mostly from Canada. Ackee is a tree bearing fruits that grows all over Jamaica. The pods must be opened before it can be eaten. It is normally cooked with saltfish but if a person has high blood pressure they might prefer to desalt  the salt fish separately. After the ackee is cooked, the water can be drained off. Cut up seasoning such as onion, garlic, escallion and put in a frying pan along with your saltfish, then you pour in the ackee. Stir for about five minutes before serving. This dish is normally served at breakfast but it can be had for lunch or dinner. For breakfast serve with fritters, roasted or fried breadfruit, boiled yams, boiled bananas and boiled dumplings. You can also serve it with fry dumplings.For lunch serve with rice and peas and for dinner you can also serve with rice and peas. You can also serve it with boiled yams, bananas and dumplings. Instead of saltfish you can use pork or a mixture of pork and saltfish. There is tinned ackee sold all over the world. You can get ackees to buy in most supermarkets. Bear in mind that the best way of preserving it is to cook and then freeze it. Did you know that instead of salt or pork you can use salt mackerel? Again desalt the mackerel the same way as you would the saltfish;
